Make ahead Breakfast Enchiladas

Do you want to make Easter morning special with a warm yummy breakfast?  Here is a thrifty recipe that you can make the night before, and all you will have to do is bake it the next morning.

You will need

  • 10 flour tortillas
  • 3 cups grated cheese
  • 3 green onions chopped
  • 8 eggs
  • 2 cups half and half
  • sliced ham (20 thin cut or 10 thick cut)

On a flour tortilla lay down sliced ham, cheese and onions.

Roll up and stack in buttered, baking dish

In a bowl whip, 8 eggs with 2 cups of half and half ( or milk if you don’t have half and half)  Salt and paper

Pour over the top of the filled tortillas, cover with plastic and place in refrigerator 4-12 hours

Top with  1 cup cheese

Bake in the oven at 350.  Bake with foil on for the first 25 mins, take foil off and bake another 10-15 mins till eggs are done.

IMG_1071Take out of oven, let rest for 10 mins before serving.  Hope you enjoy them!  You can also make these with sausage.

I made these for our Easter Breakfast and they were so yummy! I made mine with sausage and my family really liked them. They were so easy to put together the nite before and then just pop in the oven when were were ready to eat them, thanks for all the recipes you post!!

WOW. Our family just had these for dinner tonight. I expected them to taste good, but these were FANTASTIC!! And so easy and inexpensive to make! I’m a full-time Mom, full-time Wife and a full-time Employee, so I really value quick, easy and yummy dinners! thank you!

I made these last night & we just finished having them for our Easter breakfast. Big thumbs up! Everyone loved them. I made a pan of ham ones and also made a pan of sausage ones. We used Jimmy Dean maple sausage & they were amazing. Thanks so much for the recipe. It made our morning of hunting easter eggs and listening to “can I eat the candy now?” go by so much smoother.
