Readers tip: Zucchini with Balsamic

Last week one of my readers left this tip on my Grilled Zuccini post,

We LOVE grilled zucchini and squash. I marinate it for 15 minutes in a balsamic vinegar and olive oil dressing. Then grill them on the foreman for a fantastic dish!!

So I thought it was worth a try…

IMG_3472I am not sure if I did something wrong, but the skins turned really bitter? They looked and smelled yummy, Has anyone else has this problem?

My mom always told me not to eat bitter zucchini because it could cause diarrhea and vomiting. I did some research and found it to be true. I researched it again and found this. Love your site, Dava

Sarah, It looks like your reader used a vinegar/oil combination or dressing, not straight vinegar. That might be why it turned out bitter?

Try cutting them into thick rounds (half inch of more), that way the skin of the zuchs don't touch the grill as much. That's how we do it here and they are great for kids. Also try a recipe for a honey-balsamic-garlic-olive oil vinaigrette. That usually taste pretty good on summer veg.

I toss sliced zucchini and squash with cubed chicken, in a ziploc bag with balsamic vinegar, little bit of wine, salt and pepper, and bake in the oven for 15-20, its good and fast! Just an idea :-)

Hi! Cucumbers and squash will be bitter, straight from the garden, i they haven't had a good watering. It's best to water your garden really good the day before you pick, or you will get a bitter fruit.

Sarah, Sometimes if the squash isnt super fresh I have had this problem with it tasting bitter but yours looked pretty fresh. I am going to try it this way. I love grilled zuccini too!
