Passing along this thrifty recipe that I made Saturday night for my families Sunday morning breakfast.07

My elderly neighbor used to tell me about how her husband would put his oatmeal over the pilot light on their gas range over night. I always thought that was Thrifty of him as well as highly convenient.

In watching a new program they shared a recipe that I tried, and it reminds me of my elderly Thrifty neighbors, sadly they are both gone now.

You will need:

  • 8 cups water
  • 2 cups Steel cut oats (aka Irish Oats)
  • 1/3 cup dried cranberries*
  • 1/3 cup dried chopped apricots*
  • 1/4 teaspoon salt, or to taste
  • *Note- I didn’t have either apricots nor cranberries so I used 2/3 cup┬áraisins

Pour all ingredients into the crock pot, and stir.

Set the cooker on low, put on the lid and cook until oats are tender and porridge is creamy (about 7-8 hours).

Stir and serve how you like your oatmeal.

I really like coming down into the kitchen with breakfast waiting for me.

I did the recipe and the oat meal turned out perfect! It made steel cut oats creamy like rice pudding or something! I added a little agave nectar and milk and my daughter and I enjoyed! My only thing is that I would half the recipe next time - it makes a lot.

...turns out that 14-15 min in the Pampered Chef microwave rice cooker is just perfect!

Another great recipe steel cut oats recipe: Wipe inside of crockpot with a little coconut oil and add: 1C coconut milk, 3-1/2 C water, 1-3/4C steel cut oats, 1/2t sea salt, 1/4t allspice, a few drops of vanilla, a squirt of agave. Then cook on high for 2-4 hours (or on low for 6-8 hours) and stir in dried cranberries and/or chopped nuts. This oatmeal's great hot, cold or reheated :-) I'm trying out this recipe using my pampered chef rice cooker in the microwave - not sure just how long it'll need to cook, but I'm hoping it turns out just as great!

Thank you so much! I have been looking high and low for a steel cut oats crock pot recipe. I found a couple, but no one had tried them - so thank you!!! I'm excited!

Good question Jamie. I would say it serves 6-8, I would guess about 1 cup each.

Bring your steel cut oats to a boil for 2 minutes the night before, then turn off the burner. You can cook them in 10 minutes or less in the morning after they have rested all night. WINCO has steel cut oats for about .80 a lb in their bulk section.

Thanks! I will have to try this. I have been using my Pampered Chef rice cooker to cook my steel cut oats the night before and then reheating them in the morning. Having it hot and ready would be better.
