With the warm summer weather our garden is giving us produce to pick daily. We are also looking for cool recipes to eat at the end of a hot summer day. I made up this recipe last week after making the fixing for BLT sandwiches only to realize my kids ate all the bread for lunch. Thinking quick I tossed it with noodles instead and it turned out amazing. We ate every last bite and all 4 kids were asking for more!
You will need
- 3 cups lettuce chopped
- 4 cups cooked pasta that has been cooled in ice water( use what ever kind you have penne, bow tie, macaroni )
- 1 green onion chopped
- 1 cup cucumber cubed or sliced
- 1 cup chopped tomatoes
- 1 cup cooked bacon bits
- 1 cup mayonnaise
- 1 tablespoon lime juice
- 1 1/2 tablespoon dry ranch seasoning (from a dip packet)
- salt and pepper to taste
Add the dry ranch seasoning to the mayonnaise and lime juice, mix well set aside. Prep vegetables, noodles and bacon. Add all the ingredients into a large bowl and toss. Salt and pepper to taste. Serve cold! This recipe make 4 servings.
