Recipe for Cooking ~ BLT Garden Salad

With the warm summer weather our garden is giving us produce to pick daily.  We are also looking for cool recipes to eat at the end of a hot summer day.  I made up this recipe  last week after making the fixing for BLT sandwiches only to realize my kids ate all the bread for lunch.  Thinking quick I tossed it with noodles instead and it turned out amazing.  We ate every last bite and all 4 kids were asking for more!

You will need

  • 3 cups lettuce chopped
  • 4 cups cooked pasta  that has been cooled in ice water( use what ever kind you have penne, bow tie, macaroni )
  • 1 green onion chopped
  • 1 cup cucumber cubed or sliced
  • 1 cup chopped tomatoes
  • 1 cup cooked bacon bits
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 1/2 tablespoon dry ranch seasoning (from a dip packet)
  • salt and pepper to taste

 Add the dry ranch seasoning to the mayonnaise and lime juice, mix well set aside.  Prep vegetables, noodles and bacon. Add all the ingredients into a large bowl and toss.  Salt and pepper to taste.  Serve cold! This recipe make 4 servings.

I love that you made a new salad on the fly. This is almost always how we eat. With hubby's salary cut by 70% we have had to get creative in order to keep eating. I amazed every week how it all somehow comes together for right around $50.00 we have another $50 if we need it in our emergency envelope for meds or a doc visit but we manage week after week. Today I bought produce and some chicken for this week. I am thinking about a turkey. That would go far. The garden and friends have been extremely good to us. We are doing what we can with what we have. Beans , Rice and Potatoes go far!


This looks so good!! I'm going to have to add it to my menu this week.
