Recipe for Cooking ~ Cherry Vanilla Jam
- 4 cups of pitted cherries
- ½ cup of lemon juice
- ½ cup white sugar
- ½ cup brown sugar
- 2 tsp vanilla extract
Add the cherries, sugar and lemon juice to a medium pot. Cook over medium heat until they begin to bubble. Continue to cook for 20-25 minutes stirring often. Add vanilla and cook until the consistency is jelly like and will coat the back of a spoon. Mash cherries to desired consistency.
I have done this recipe a couple of times. I have made chunky and a smoother preserve by using my hand blender to whip the cherries to a smoother consistency.
I made a batch for the freezer and a canned a batch, processing for 20 minutes in a water bath.
