Recipe: How to make basic White Sauce

I was about 8 years old when I learned how to make white gravy (basic white sauce).  It is a great thing to learn to make and can be “tweaked” to work in many different ways.

You will need

  • 2 TBS butter
  • 2TBS flour
  • 1/4 salt
  • 1/8 pepper
  • 1 cup milk (add more for a thinner sauce)


Melt butter over medium heat.  I always add a little Mrs. Dash to mine, gives it a little more flavor, but that is totally optional.


Add flour to melted butter, and stir


You will want to cook the flour butter mixer 3-4 minutes.  This allows the flour to cook, and it takes away the raw flour taste, and will get more of a nutty flavor.


Wisk in milk, it will be thin at first.  But as it cooks it will thicken.


You can always add a little more milk if you want it thinner.   If you do not want to use milk, you can use broth, to make gravy.

You can use shortening instead of butter too. I add some boiled potatoes and peas and serve with ham-very county and old fashioned.

I use essentially the same recipe you do for a white sauce. Here's how to turn it into curry if you'd like: Add between 1-2 Tablespoons of curry powder (the yellow kind), 1/2 tsp of garlic or so, salt & pepper to taste if it needs more. Add some chopped, cooked chicken and serve over rice. We usually eat it with raisins, shredded coconut and slivered almonds on top. It's a very American type curry and really easy to throw together for a quick and tasty dinner. MMmmm...I might have to make this recipe sometime this week.


I cook up a pound of plain old on sale bulk sausage and use the grease from that plus milk and pepper. Once the gravey is done I add the cooked sausage back in and we have Sausage, Biscuits and Gravey. YUM!


I use only 1 T butter and about 1-1/2 cups of milk and then add about 8 oz of velveeta cheese to make my cheese sauce for macaroni !!! I use the same recipe for the cheese to put over potatoes for scalloped potatoes!
