Southwest Chicken with 7UP- Crock Pot Recipe

Thanks to my friend Sheri for sharing this tasty chicken crock-pot recipe with me…

Southwest Chicken with 7up in the crock-pot

You will need:

  • 2-4 large chicken breast boneless skinless (depends on how much you want to make)
  • 1 Taco seasoning packet (I made my own)
  • 1 Jar of Salsa (about 2 cups)
  • 1 Can of 7UP

Add all 4 ingredients to a crock pot.  I started with the Chicken (I used it straight from the freezer) then put the Soda in , next  the salsa and sprinkled the seasoning on top of it all.

Cook in a crock-pot for 3 hours on high.

Take chicken out, shred and return to crock-pot for another 2 hours on MEDIUM.

You can then use this a filling in your favorite dish, tacos, burritos, nachos…. but we ate it on the Scones I told you about here as Navajo Tacos  (scones, re fried beans, southwest meat, lettuce, tomatoes, guacamole).

That is a great idea Laura I will have to try the rolls. Do you jus roll them out and what do you fry them in?

Sarah- we use thawed Rhodes rolls and fry them up in oil for our fry bread. Rena- Yes! You could use any kind of soda. Be buy Shasta, so we when do meat in the crock pot, we usually use black cherry soda! :)Yum!

Yep, I love my electric pressure cooker. I found dinner for tonight except it will have to be pressure cooked since the chicken is frozen. LOL!

dinner tomorrow! I especially love the fact that chicken can go straight from freezer....I am never planned ahead far enough to have thawed meat! (although now that I can take it out for tomorrow, I won't bother!) Love your simple recipes!

Could I use Sierra Mist instead of 7up?? Looks good by the way I love it when you post recipes they are always so simple, which is what I need and they always taste good! Thanks!
