Spinach Vegetable dip from the Bulk Bins at Winco

Ok I am about to tell you one of my “thrifty secrets”…. so listen up 🙂

Dips of any kind happen to be one of my favorite treats to make for a party or social event.  They feed a large group, and are budget friendly especially when you use great  resources like WinCo’s bulk Bins.

For this dip you will need 3 tablespoons of Winco’s  DryVegetable Soup base (locally it was #2172) sold in their bulk bins.  I was able to get enough for 3 batches of dip for only $1.03 ( or .34 a batch).

You will need

  • 1/2 cup cooked spinach
  • 3 tablespoons Dry Vegetable soup
  • 1 cup Mayo
  • 1 cup Sour Cream
  • 1/4 teaspoon granulated garlic
  • Pinch of salt and pepper
  • Something to dip- Bread, crackers, Vegetables etc.

You can buy the frozen cooked spinach but I prefer to steam my own.  I think the fresh steamed spinach just taste better, normally one bag will cook down to about 1/2 cup.  Chop before you steam it, and cook for 5-8 minutes till tender.

Once you have steamed your spinach, drain and while it is STILL HOT  in your pot add your 3 tablespoons Dry Soup mix.  This will help to soften and reconstitute the vegetables.   Put the lid on and leave them for 20 minutes or so….  Then put them in a bowl and  refrigerate till cool.

Once the spinach has cooled add to mayo, sour cream, garlic and salt & pepper.

Cover and return to refrigerator for 4 hours to let flavors blend before serving. Yields 2 1/2 cups dip
