Tomato Tart

1 Tbsp extra virgin olive oil
1 Large onion (sliced as thinly as possibly)
Pastry for 9? pie crust
4 oz. goat cheese, crumbled
2 tsp coarsley chopped fresh thyme or 1/2 tsp dried
3 medium tomatoes cut into 1/4? thick slices

Preheat oven to 450. In a skillet, heat oil over medium high heat. Add onion and cook, stirring often, until golden brown. Remove from heat. Lay pastry dough flat on an ungreased baking sheet. Spread onion evenly on top, leaving a 1? border. Dot with goat cheese, sprinkle with thyme and some pepper. Place tomato slices on top, overlapping slightly. Sprinkle with salt and pepper. Fold 1? border over edge of topping crimping the edges. Bake until crust is golden (18-20 minutes).

Makes 4 Servings. ~163 calories per serving.

This isnt really a recipe so much as an idea, but its my new favorite for lunch or dinner.
1/2C cooked quinoa
couple handfuls of spinach
tomato chopped
.5 oz feta cheese

The warm quinoawilts the spinach and the cheese is creamy and salty. In total I think this is around 210 calories and 5 grams of fat, plus its all pretty low price. I get the feta in large bricks at Costco because it lasts MONTHS if stored in an airtight container. Quinoa I buy in bulk and spinach and tomatoes are pretty frugal items. Of course you can always bulk this up with some chopped chicken, but without any meat it still has 18 grams of protein!
