Homemade Oh Henry Rice Krispie bars

These Homemade Oh Henry Rice Krispie bars are delicious! Crunchy peanuts and crisped rice cereal, gooey peanut butter and semi sweet chocolate make these bars absolutely amazing. Whether you’re wanting a show stopping treat for a potluck, or just want to have something delicious for Sunday dessert, this is a recipe you have to try!

Homemade versions of Oh Henry have been around for ages, but I have modified this one and it is my family’s absolute favorite. This recipe makes enough for a sheet pan, so there’s plenty to share.

Oh Henry bars can be super finicky. If you boil the butter and brown sugar too long you end up not being able to cut or eat the bars after a few hours or a day. This recipe is a lot harder to mess up and stays ooey gooey for longer, if the pan lasts that long ?.

For this recipe you will need:

1 cup unsalted butter

1.5 cups brown sugar

1.5 cups corn syrup

1 bag mini marshmallows

1.5 cups creamy peanut butter

2 tsp vanilla

2 cups chopped peanuts

9 cups crispy rice cereal

2 cups semi sweet chocolate chips

Start by prepping your sheet pan or jelly roll pan. You can either grease or line with parchment paper.

Begin by melting your butter in a large pot over medium low heat stirring often. Increasing the heat will make it more likely to scorch or burn. Once the butter is melted add the brown sugar and stir in. Once mixed together add the corn syrup and stir constantly until it comes to a boil. Once it comes to a boil remove from the heat right away! Do not over cook, that will make your treats hard to cut and eat.

Once you’ve removed from heat add your marshmallows and mix in. Once they are well coated and starting to melt, stir in the peanut butter and vanilla and mix in well. Once the mixture is melty and combined add the chopped peanuts and stir to combine. Now stir in your crispy rice cereal.

Pour mixture into your prepared sheet pan and quickly spread the mixture out while it is still hot. Sprinkle with the chocolate chips and let it set for a minute or two. When the chocolate chips turn glossy you’ll know they are ready. Spread over the top of your bars so they are all covered with chocolate.

I love to eat one at this stage. They’re so gooey and delicious. After an hour or two they should be set. This is when you can cut them.
