Almond Crusted Tilapia (or any firm white fish)
served with Whipped Cauliflower and Asian Salad
5 pieces of Tilapia or any type of firm white fish
3/4 cups of almonds
3 eggs
2Tbls Milk
favorite seasonings
Coarsely chop almonds -I used a food processor
Set aside in a gallon storage bag and add seasonings
Mix 3 eggs and about two tablespoons of milk. Whip with a fork.
Dip a piece of fish in the egg mixture and then coat with nut mixture until all fish are coated. Put fish in greased baking pan.
Bake fish at 350 degrees for about 20 minutes or until fish is flaky.
I served my fish with Whipped Cauliflower and Asian Fresh Express salad.
Whipped Cauliflower:
Cook one head of cauliflower. When soft, put in mixing bowl and mix with 1/4 of butter.
