Ratatouille Recipe and How to guide

I have watched the movie Ratatouille and always wanted to try the dishes that the cute little Rat made.

Ratatouille was the main one that I really wanted to try but my husband is a little hesitant to try new things and didn’t want to eat eggplant.

However, this summer we joined a food co-op that supplies us with surprise veggies every week. Needless to say, I was thrilled when we got an eggplant. Finally, I was going to try ratatouille.

Instantly, I started searching for a recipe. But I couldn’t find one that sounded good. Granted there were tons available, floating out in the interwebz, but I wanted one that fit us. So I decided to just wing it. I mean how difficult can it be to make a vegetable stew.

Here is the recipe that I created to make my own ratatouille.

Ingredients:

1 Eggplant
1 Squash
1 Bell Pepper
1 Onions
Many Tomatoes
A Few Mushrooms
Sausage
Thyme
Rosemary
Basil
Butter


Step One:
Saute Sausage. This can be any type of sausage you like or you can leave it out all together. Ratatouille is traditionally an meatless dish but my family is a bunch of carnivores.

Step Two:
Cut up all of the veggies in your desired size. I cut everything into similar sized chunks.

Step Three:
Once the sausages is cooked, add the onions and bell peppers.

Step Four:
After the onions and bell peppers reach a semi done state, add the tomatoes. I recommend using a lot of tomatoes if you want your ratatouille to be soup-like.

Step Five:
When the tomatoes have begun to release their juices add the eggplant, squash, and mushrooms. Season with the herbs, salt and pepper to taste. I added butter to mine to give it a rich flavor. This is totally optional. Let the the pot of yummy goodness stew until all the veggies reach the desired doneness.

Step Six:
Serve with a side of bread and enjoy! I recommend oven toasting ciabatta bread slices with butter, garlic and basil. It is great for dipping and soaking up the yummy juices of this Delicious ratatouille dish!
