Rich and Hearty Fettuccine Pasta and Meatballs Slow Cooker Recipe

Cooking time 4-5 hours in a slow cooker or crockpot

Start with the meatballs:

1/2 lb ground beef 97% lean
1/2 lb Italian sausage
1/2 tablespoon Italian seasoning
1 clove garlic minced
salt and pepper (pinch)

Mix it all in

In a mixing bowl mix together ground beef, sausage, seasoning and garlic.  Form into one inch balls, and place in the bottom of your crock pot. I like to form my balls with a small scoop makes them all the same size and quick and easy.  Once you have all the balls on the bottom of the slowcooker, sprinkle diced onions on top.  Cover with a lid and cook on high for 2 1/2 hours.  They will be cooked through at this point and hold their shape till the end of the cooking process. Adding to the Slow Cooker

On top of the cooked meatballs add, 1 16 oz box of dry fettuccine pasta.  You can leave the pasta long but I break mine up so it fits easier.  Pour in 4 cups hot water,  and 1 24oz jar of spaghetti sauce.  Make sure all the noodles are under the liquid. Place lid back on top of crock pot and cook for 1 – 2  hours.  It depends on how well you like your pasta done.   The longer it cooks the less sauce there will be and the softer the noodles.  Check it every half hour or so, give it a little stir and watch the magic of crock pot pasta happen.  It is so good your family will be asking for seconds.  Top with Italian cheese and enjoy.Rich and Hearty Fettuccine Pasta and Meatballs Slow Cooker Recipe ~ Crockpot Pasta recipe

TIP ~

If you were to use a thinner pasta like spaghetti or angle hair your cooking time would be MUCH shorter, like 30- hour instead.

Go ahead and wipe the drool off your mouth…. this picture will do that to you, and yes it really is that good. This is not a fast recipe, but it is worth the wait.  The meal itself is rather easy most the time is just waiting for it to cook and to get the meat to the point that it falls apart and melts in your mouth.  This recipe is also great as leftovers or to freeze part of it for a super fast and easy dinner idea another night. We eat it on top of mashed potatoes but you can also eat it over rice or noodles.

Ingredients

2 pounds of beef, cubed
Olive oil
6 carrots, diced
2 celery sticks, choped
1 onion, sliced
1 shallot, sliced
4 garlic cloves, minced
1 small can of diced tomatoes (any size is ok, depending how thick you’d like the stew)
1 quart of beef broth
1/2 cup of red wine
2 Tbsp of Italian seasoning
1 bay leaf
handful of parsley, chopped
1 cup of frozen peas
salt and pepper to taste
1/2 cup of flour

Directions

Season meat with salt and pepper. In a bowl coat the meat with the flour and remove any excess flour. Brown meat in a large pan with the olive oil. Then add the onions, shallots, garlic and celery. Cook for a couple of minutes or until onions are softened, in medium heat. Deglaze the pan with the wine or grape juice. Cook for about 5 minutes, add the tomatoes and crush them a little with a wooden spoon.
Then add the italian seasoning, the bay leaf and beef broth. Stir. Lower heat and allow to simmer for 3 hours, stirring frequently.
Once the beef is tender, remove the bay leaf. Add the carrots. Test flavor, add salt if needed. Allow the carrots to cook for another 50 minutes in low heat. Put in the frozen peas during the last 10 minutes of cooking.
Before serving add more fresh parsley. Serve over mashed potatoes. Enjoy!

Ingredients

 French Bread Pizza ~ Easy Make Ahead Camping Recipe

When I go camping I like to have easy meals, but I also like to have warm hearty meals that will fill my kids tummies.  I love camping recipes that can be prepped and made ahead of time, this French Bread Pizza recipe is one of our families favorite campfire recipes. These french bread pizzas can be made before you even leave for your trip, I like to then freeze them. Keep them in the cooler and then when you are ready to cook them toss them right on the coals of the fire to cook.

  • French Bread (or mini french bread loaves)
  • Softened cream cheese
  • Grated Mozzarella Cheese
  • Pizza or marinara sauce
  • Pizza toppings ( pepperoni, canadian bacon, olives, pineapple, mushrooms, bell peppers, sausage)
  • Aluminum Foil (heavy duty)
  • Gallon sized ziploc bags (to store them in)

Spread a thin layer of pizza sauce on top of the cream cheese. Layer your pizza toppings and cheese, add the top back on your french bread. Wrap with heavy duty foil, I like to make sure it is wrapped at least two times. This helps it heat more even and avoid being burned.

Easy Camping Recipes ~ French Bread Pizza

I store these in a large gallon ziploc bag, since ice in coolers often melt and leak. The ziploc back will help keep them dry until you are ready to cook them. I then put them in the freezer,  before the ice chest orcooler to help keep them cool on your trip.  Make sure they are thawed before you put them on the fire to cook. It is best to put them on the coals of the fire (instead of the flames). Turn them a few times to help them cook evenly, about 5-8 minutes on the fire and you should have a hot and yummy french bread pizza!

How to Make a White Castle Burger

We created this post a few years ago it was not planned, we were making White Castle Burgers for dinner and decided to snap a few last minute photos on our phone.  But when I see this recipe photos I have to cringe a little… so I decided to keep the recipe as is, but I wanted to add a few updated photos. Yes I know it is a fast food recipe so who cares if it is pretty or not… but it just makes me feel better having a photo that is actually in focus, lol. Enjoy!

White Castle Burger Copycat recipeSo many grew up on the famous White Castle burgers. They are even know as the first chain restaurant! So how do you make a White Castle Burger or “Slider“? It is quite easy and I will even show you an easy way to cook them up too so you get the nice thin patty of meat! And the best part out side of taste is that they are cooked in the oven! Yes cook your hamburger in the oven in 20 mins! The patties come out so nice and flat and are cooked perfectly on the onions!

  • 1 pound Hamburger – 80/20 is best
  • 2/3 cup Onion – finely chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 eggs
  • 1/4 cup plain bread crumbs
  • 1 package Dinner Rolls

Thoroughly mix meat.

Then with straws poke holes close and evenly over entire meat. This allows the onion juice to rise through the meat, just as they do at White Castle.

Place in pre-heated oven at 400 F (bake) for 20 mins
