Chinese Chicken Salad ~ Easy, Summer Recipe
Every time I make this recipe, I get the song by the Bare naked Ladies called One Week stuck in my head! Do you remember that song? Hopefully I got it stuck in your head too so I am not all alone singing it!
This salad recipe is one my mother in law has been making for years and is so easy, tasty and perfect for a hot summer day when you don’t feel like using the oven! Great alone or served as a side dish.
Recipe:
1 head of cabbage shredded
2 cups diced or shredded cooked chicken
2 oz slivered almonds
1 pkg ramen noodles (chicken flavor) crushed up, uncooked with flavor packet set aside
2 green onions sliced finely
Dressing:
1 flavor packet from ramen noodles
1 Tbsp sugar
1/2 cup canola oil
1 tsp salt
1 tsp pepper
3 Tbsp white vinegar
Combine the ingredients for the salad in a very large bowl and set aside.
Meanwhile, mix your dressing ingredients in a small bowl, making sure it is stirred up well.
Pour the dressing over the salad and toss to coat evenly. I like to serve right away, so the ramen noodles are still crunchy. This is just a matter of personal taste. I have found that some people prefer the noodles when they have set for a while in the fridge and softened up. Try it both ways and see what your family prefers!
