Well you have all heard of Thin Mint Girl Scout Cookies, well these are their not-so-thin cousins.
Get your mug-o-milk ready for these minty chocolate wonders.

Chubby Mint Sandwich Cookies

  • 1 box Pillsbury Devils Food cake mix or your favorite chocolate cake mix
  • 2 Tbsp brown sugar
  • 2 eggs
  • 1/3 cup oil
  • 3 Tbsp water
  • 1 cup Andes Mint Chips

Chocolate Frosting
Mint Extract
Green Sprinkes

In a bowl mix the cake mix, eggs, oil, and water together until a soft dough forms.

Fold in mint chips.

Use a 1” cookie scoop and flattened each ball a bit so it would make a slightly flatter cookie. Bake at 350 degrees for 8-10 minutes until set in the middle. Makes 30ish single cookies or 15 cookie sandwiches.

Mix some mint extract (a few drops or ¼ tsp) into your chocolate frosting and put in a piping bag or Ziploc with an end cut off. Pipe the chocolate mint icing onto one of your cookies and top it off with another cookie and roll in the green sprinkles for a little cookie bling
