When I need a fast and easy meal idea this is one of our favorite go to recipes. Creamy Chicken Taquitos recipe, can be meal prepped or made the day of. You can also use variations to suit your families needs.
What you need for this Recipe:
3 large chicken breast
1 brick of cream chese
1 7oz can of Salsa verde (green salsa)
1/2 TBS Cumin powder
1/2 TBS Paprika powder
1/2 TBS garlic powder
15- 20 flour tortillas
1/2 cup oil for frying (if you bake them, if you air fry them you will not need this)
In a crockpot add chicken breast, seasonings on top then cream cheese and salsa. Put the lid on and cook on high for 4-5 hours. Or put on low and cook 7-8 hours. Once cooked, use forks to shred chicken, and stir in cream cheese.
Lay a flour tortilla down, and on one side about 2 inches from the edge make a row of the shredded chicken mixture. If you want you can also add some cheese, corn or beans. Fold the edge of the tortilla over and pull the meat mixture tight against the edge and roll up. Set aside seam side down and repeat this on all tortillas.
You can choose to bake, air fry or pan fry these. We like to add a very THIN layer of oil in a skillet and fry them buy rotating each side till golden brown. Cook over med – high heat 2-3 minutes.
Serve with sour cream, guacamole or Creamy Cilantro Lime Ranch Dressing . We LOVE the cilantro lime ranch the best.
