Make ahead Breakfast Enchiladas

Do you want to make Easter morning special with a warm yummy breakfast?  Here is a thrifty recipe that you can make the night before, and all you will have to do is bake it the next morning.

You will need

  • 10 flour tortillas
  • 3 cups grated cheese
  • 3 green onions chopped
  • 8 eggs
  • 2 cups half and half
  • sliced ham (20 thin cut or 10 thick cut) You can also use cubed ham

Breakfast Enchilada

On a flour tortilla lay down sliced ham, cheese and onions.


Roll up and stack in buttered, baking dish


In a bowl whip, 8 eggs with 2 cups of half and half ( or milk if you don’t have half and half)  Salt and pepper


Pour over the top of the filled tortillas, cover with plastic and place in refrigerator 4-12 hours


Top with  1 cup cheese


Bake in the oven at 350.  Bake with foil on for the first 25 mins, take foil off and bake another 10-15 mins till eggs are done.
