Mint mini chocolate chip fudge

This delicious Mint mini chocolate chip fudge will be the star of the show on any goody plates you add it to this Christmas season. Mint mini chocolate chip fudge

I love the combination of chocolate and mint. One of my many weaknesses. I don’t think you can go wrong with that combo. This fudge is creamy and just the right amount of sweet. It is always a favorite when it’s added to goody plates. The addition of white cake mix makes this recipe stand out from other mint fudge recipes. It really gives it such a perfect texture.

You will need:

2 Cups of white cake mix, any brand
2 Cups powdered sugar
green food coloring
1 tsp mint extract
3/4 Cup mini chocolate chips + a handful to press on top of the fudge.
1/2 Cup butter
1/4 Cup milk

Begin by mixing your powdered sugar and cake mix in a bowl and set aside.

In a microwave safe bowl melt the butter and milk in the microwave for 1-2 minutes. Until butter has melted. Once the butter has melted stir the milk and butter together and make sure it is warmed through.

Pour the butter mixture into the powdered sugar mixture and add the mint extract and food coloring. I do a few drops of the food coloring, but you can add as much as you want to get the color you are after. Stir until everything is combined.

Add in the mini chocolate chips. Don’t forget to leave a handful out for the top.

Pour the mixture into a greased 8×8 pan gently pressing down with your hands.

Place dish in fridge for a couple of hours to help it harden.

Remove and cut into squares. I usually cut it into 24 squares.
