If you love peanut butter and chocolate then you are going to love these melt in your mouth Peanut Butter Ball Cookies. With peanut butter ball filling, and a crisp cookie crust on the outside, dipped in chocolate…. what is not to love. Best part is they are quick and easy to make!
Peanut Butter Ball Cookies
You will need
- 1 cup Peanut Butter
- 4 oz cream cheese softened (half an 8 oz brick)
- 2 tablespoon butter (at room temperature)
- 2 cups powdered sugar (might need a little more is dough is sticky)
- 1 box Nilla Waffer cookies
- 1 cup chocolate chips (melted for dipping)
To make the peanut butter ball filling, mix together peanut butter, cream cheese and butter. You can do this will a hand mixer or a fork. If your ingredient are cold you will have to use a mixer, as a fork will not work. Once well blended, stir in the powdered sugar one cup at a time. It should form a soft dough, if the dough is to sticky to work with add another 1/2 cup of powdered sugar or set in refrigerator, as it cools the dough will become more firm.
Take out 1 spoonful at a time and roll into 1 inch balls. I found it is easiest to roll the balls between your hands, but you could also use a small scoop. Sandwich those balls in between two waffer cookies.
In a double boiler, or the microwave melt the chocolate chips. If you use the microwave, melt them just 3o seconds at a time, stir each time to prevent scorching the chocolate. Once the chocolate chips are melted, dip half the cookie in the melted chocolate. Place on foil or nonstick baking mat and allow chocolate to harden.
