Roasted carrot fries. Yep, you read that right. Satisfy that craving for something crunchy, salty and tasty without the calories, fat and unhealthiness of potato fries. You won’t miss them at all while you are noshing on these tasty snacks.

Here is what you need:

1 1/2 lbs Carrots
1 tsp Sugar
2 tbsp Olive Oil
1/2 tsp Salt
2 Tbsp fresh rosemary, finely chopped
1 pinch pepper

Start by preheating your oven to 425. While it preheats, line a baking pan with parchment paper.
Peel the carrots. Cut and discard the ends and slice lengthwise into 1/4 inch sticks.
In a large bowl combine the oil, and seasonings with the carrots. Stir together and coat them evenly.
Spread the carrots in a single layer on the baking sheet and bake for 20 minutes or until the carrots are tender.
This makes 4 servings. Serve with ranch dressing for a tasty snack.

The roasting of the carrots brings out a sweetness to the carrots. Switch up the herbs for other flavor combinations and a side dish that your whole family will enjoy.
