Chicken Pot Pie Waffle Boats by Tiffany
 I love love love this comfy, comfort filling. It’s one of my “go to” recipes. I honestly struggled on a dinner recipe for Eggo, I kept tossing different recipes back and fourth in my head, but finally settled on chicken and waffles. I wanted to bring comfort, so that meant adding gravy and mashed potatoes, because that’s what comfort is in my book. What about your’s?  Voila, Chicken Pot Pie Waffle Boats were born. And thank the good Lawrd too, because I was makin’ myself nuts!
Serves 5
Ingredients
  • 3 boneless skinless chicken breasts
  • 2 gala apples – cored, quartered and chopped
  • 1 small sweet onion, chopped
  • 7 garlic cloves, smashed
  • 1/4 cup white cooking wine – (found near or around the vinegar & balsamic/condiment isle in your local super market.)
  • kosher salt, to taste
  • fresh cracked pepper, to taste
  • 1 teaspoon rosemary
  • sprinkle of thyme
  • 3 tablespoons butter
  • 2 1/2 cups frozen mixed vegetables
  • 1 1/2 cups water
  • 2 heaping teaspoons corn starch
  • 1 box (12.3 oz.) Eggo Waffles- Buttermilk
  • prepared mashed potatoes
Directions
  1. Preheat oven to 350 degrees F.
  2. In a small baking dish place apples. Lay washed chicken breasts on top of apples. Evenly spread onions and garlic around and on top of chicken. Pour white cooking wine around the sides of the baking dish. Now season tops of chicken with kosher salt, fresh cracked pepper, rosemary and thyme. Top each piece of chicken with 1 tablespoon of butter. Bake in a preheated 350 degree F. oven for 1 hour or until chicken is fork tender and juices are clear.
  3. Meanwhile bring waffles to room temp. and make your mashed potatoes. Keep potatoes warm.
  4. Let’s make the gravy. Remove chicken breast from baking dish. Set aside. In a medium sauce pan, pour all the juices, apples/onion mixture into the pan. With an immersion blender, blend until you reach a smooth consistency. Add 11/2 cups water, more salt to taste and fresh cracked pepper. Using the immersion blender, blend in the cornstarch. Cook over medium heat, stirring, until mixture slightly starts to thicken. Remove from heat.
  5. Cut chicken into approx. 1 inch cubes. Add chicken and frozen vegetables to blended mixture. Cook over medium heat until vegetables are heated through. Remove from heat, cover with lid to keep warm. You may need to slightly reheat when it’s time to assemble waffle boats.
  6. Toast your waffles per packaged directions. Scoop mashed potatoes on top of two waffles. Make an well in the center of the mashed potatoes. Ladle chicken pot pie mixture into the well. Serve.
