Recipe- Corn and Bean Salsa

IMG_4518 I really do not measure much when I make this, I just toss it all in.  You really can’t mess it up.


  • Small bell pepper
  • Small bunch of Cilantro ( about 1/3 of cup)
  • 2 small tomatoes ( about 1 1/2 cups)
  • 4 green onions
  • If you like it spicy you can add a diced Jalapeño (but with little ones, I leave it out)


Add them to a can of Black beans (drained and rinsed) & a can of Sweet Corn (drained)  You can also use fresh corn if you like,


Add Juice of one lime,  Salt, Pepper, & Garlic powder to taste.


You can eat it right away, OR chill in the refigerator and let the flavors blend.

Eat with chips, as a side dish or on your favorite Mexican dish.

We like to eat this on corn tortillas, with  the Chicken Filling I posted about earlier, top with sour cream….yum!

We add avocado too and it's one of my daughter's favorite things to pack for lunch. She's not a sandwich fan, so this is a staple in our house since she gets her protein in the beans. It's delish!

Thank you so much for posting this:) This is similar to what Giant sells and we buy it everytime we go to the beach(for about $10) We even took the container home to try to replicate it, but it's been on the top of my fridge.....seeing your picture and recipe, I decided to give it a try and it's awesome:) Thanks to Neva for the Avacodo tip- we added that too-yummy!

This is almost identical to mine. So tasty on almost everything!


I add avocado to mine. It's my favorite!


I have this recipe & LOVE it! We eat it either warmed OR sometimes cold. A nice touch is to add a dash or two of cumin & chile powder & a squeeze of lime juice!
