I really do not measure much when I make this, I just toss it all in. You really can’t mess it up.
Chop:
- Small bell pepper
- Small bunch of Cilantro ( about 1/3 of cup)
- 2 small tomatoes ( about 1 1/2 cups)
- 4 green onions
- If you like it spicy you can add a diced Jalapeño (but with little ones, I leave it out)
Add them to a can of Black beans (drained and rinsed) & a can of Sweet Corn (drained) You can also use fresh corn if you like,
Add Juice of one lime, Salt, Pepper, & Garlic powder to taste.
You can eat it right away, OR chill in the refigerator and let the flavors blend.
Eat with chips, as a side dish or on your favorite Mexican dish.
We like to eat this on corn tortillas, with the Chicken Filling I posted about earlier, top with sour cream….yum!
