Have you ever noticed that after a family bbq there always seems to be left over hot dog or hamburger buns? You never know how many to buy, and there is normally lots left over. BUT they have been sitting out in the heat so the bag has started to get moister in it, so they are going to mold fast… or the bag has been left open for a few hours and the buns are starting to get stale. The “thrifty” part of me does not want to toss food. SO I came up with a recipe that allows me to use the buns for breakfast the next morning. If you only have a few buns you can substitute normal bread… or toss the buns in the freezer till you get enough to make the recipe.
Blueberry French Toast Bake
What you need:
- 9 cup cubed Hot Dog or hamburger buns
- 1 cup blueberries
- 1/3 cup brown sugar
- 1/3 cup white sugar
- 1 tablespoon vanilla
- 1/2 teaspoon ground cinnamon
- 7 eggs whipped
- 1 stick melted butter
- 2 cups half and half
Heat oven to 350 degrees, coat mini loaf pan or 9X13 casserole dish with nonstick spray and set aside.
In a large mixing bowl whip together the melted butter, sugar, vanilla, cinnamon, eggs, and half and half. Once they are well blended add the cubed Buns/bread and blueberries. Mix together well, let sit for 5-10 minutes while the bread soaks up most the liquid. Once it has set, spoon the mixture into prepared pan. Bake at 350, the mini loaf pan only needs 30-35 mins to bake, while the casserole dish will take 45-50 minutes.
You can also prepare the bread/ egg mixture the night before for a quick and easy breakfast idea. Just pop it into the oven after it has soaked overnight. You might need to adjust cooking time since it will be cold from sitting in the refrigerator overnight.
It’s very good. Personally, I’d increase each of the sugar amounts from 1/3 C. to 1/2 C. and add more berries. Very thankful to have such a great recipe for our leftover buns. Thank you for sharing.
I have tried freezing the leftover buns but I just never use them. I need to try this.
