Cream of Broccoli Cheese Soup
You will need: (When I cook soup I do not do exact measurements , I just toss it all in..sorry)
- 2 carrots
- 1 large onion
- 2 stalks of celery
- 3 small potatoes ( 2 med, or 1 large)
- 2 bunches of broccoli ( about 4 cups chopped)
- 32 oz chicken stalk
- 3 Tablespoons butter or Olive oil
- salt and pepper to taste
Cheesy White Sauce
- 4 TBS butter
- 4 TBS flour
- 1/2 teaspoon salt
- 1/4 pepper
- 2 cup milk (add more for a thinner sauce)
- 2 cups grated cheddar cheese
Wash all your veggies. Start out by chopping your celery and onions.
Add the chopped celery and onions to 3 Tablespoons of butter to a large soup pot. Cook on medium heat, till the onions start to turn translucent (about 5 min). Stir them every few minutes so they do not burn.
While onions and celery are cooking, peel and chop your carrots, potatoes and broccoli.
Add them to the pot once onions have started to change in color.
Add chicken broth, I then add a pinch of pepper ( season at the end with salt and pepper to taste)
Cover with a lid, bring to a boil. Once it is a full boil reduce heat to simmer and cook till veggies are tender. Normally about 10-15 minutes.
While your veggies are cooking, Basic White Sauce ( click here for recipe and how to post). Please note I made a double batch…. amounts listed at top of post.
Once your white sauce is made, add 2 cups or grated cheddar cheese, stir in over med/low heat till well blended.
You will be adding this to the hot soup. Making it this way helps prevent curdled milk and lumps of cheese. Put it aside for a minute and go back to the veggies.
Once your veggies are fork tender, take off heat and add 2/3 of them to a blender. ONLY FILL you bender half full, and leave the lid vented while blending.
Mix till smooth and creamy… but not to much or is will get starchy. Add back to the other 1/4 of soup in pot. Also add the cheese sauce, to the pot of soup.
Stir over medium heat till well bended. Salt and pepper to taste.
Tip: it taste even better the second day after the flavors have time to blend.
