What you need:6-7 large carrots, peeled and quartered into thin slices3 tbsp. white balsamic vinegar2 tsp. honey1/2 tsp. dried parsleypepperolive oilDirections:Preheat oven to 400 degrees. In a small sauce pan heat honey and balsamic until thinned. Add parsley and pepper. Mix. Place carrots in a square baking dish. Drizzle with olive oil and toss to coat. Pour honey balsamic sauce over carrots and toss to coat again. Bake for 25-35 minutes stirring occasionally. Enjoy!!
