No bake chocolate ice box cake

Want dessert but don’t want to heat up the house to use the oven? These No bake chocolate ice box cake are so tasty and take such little time to prepare. These are best when you make them ahead of time because as they sit the hard cookies turn soft and cakey.

Summer is great, but man it is so hot! I hate doing anything in the kitchen that requires my oven this time of year because it heats up the whole house. That is one of the best things about a no bake dessert like this one. You don’t have to sweat it out while it bakes, and a cool sweet treat is waiting for you when you are done. I love these for a dinner party or night when I have time to plan ahead as they really do need time to soften in the fridge to turn the wafers into the cakey, soft texture they are best in.

Recipe:
1 box (9oz) Famous Chocolate Wafers (Nabisco makes these) they look like this

1 cup (8 ozs) Heavy Whipping Cream

3 tablespoons powdered sugar *The sugar can be adjusted to taste

1 teaspoon vanilla

Chocolate Shavings (optional) for garnish

Directions: 
Add the whipping cream, powdered sugar and vanilla to a bowl. Use an electric mixture with whisk attachment to beat until stiff peaks form

You can add fewer cookies if you would like, but I used 5 cookies per cake and spooned about 3/4 tsp of cream between each layer. Just put a dollop of cream on the cookie, press another on top and continue until your cakes are complete. When you are done, you can add a dollop of cream on top and garnish with chocolate shavings or leave it plain.

Cover and refrigerate overnight. These get soft and may be a little hard to move from a container back to a serving platter. It may be best to keep them on a tray or something flat and cover them to prevent having to lift them out of a container.

That is it. You have a delicious dessert that everyone will love. This dessert isn’t overwhelmingly sweet and is just the perfect sweet treat.
