Oven Baked Cheesy Nachos- Recipe

We had Sweet Pork Tacos this weekend, we ate them twice but then had about 1 cup of meat left over.  Not enough for a whole meal, but I did not want it to go to waste either.  One trick to saving money on your meal planning is to take the left overs from one meal and use them in another.  Giving your family variety and cutting down on food waste.

Oven Baked Nachos are a pretty much a no brainier….. but my kids love them and think I am the coolest mom ever when I make them :).

You will need

  • Tortilla Chips
  • 1-2 cups of shredded cheese (depending on how cheesy you like them)
  • 1 cup black beans
  • 1 cup Sweet Pork or Taco Meat left overs are great!
  • 1 cup Shredded lettuce
  • 1 avocado diced
  • ( other toppings ideas olives, tomatoes, onions, salsa, green peppers)
  • Sour cream
  • Cilantro ranch dressing here

 

On a cookie sheet spread an even layer of tortilla chips.

Sprinkle 1-2 cup shredded cheese over the top, place in a hot oven at 400 degrees and bake till cheese is melted (normally 5-8 minutes).  While cheese is melting heat up 1 cup black beans and 1 cup Sweet Pork, or you can use left over taco meat too.

Take out of oven once cheese has melted, and sprinkle with warmed black beans and meat.

We also like to add, shredded lettuce and sliced avocado ( other ideas olives, tomatoes, onions, salsa, green peppers)

Serve with sour cream and Cilantro ranch dressing here
