Spinach Macadamia Nut Pesto

A few simple and healthy ingredients is all you need to make this Spinach Macadamia Nut Pesto. While traditionally pesto is made with basil and pine nuts, this refreshing version has the addition of spinach and replaces the pine nuts with macadamia nuts. It’s a tasty version of a classic that is good on so many things.

Spinach Macadamia Nut Pesto

No matter how you enjoy your pesto, you are going to love this easy to make recipe. Use it as sauce on your pizza, spread it over your chicken and fish, pasta, or just dip your favorite bread in it. It tastes so great that it is almost hard to believe it is healthy!

Ingredients:

3 packed cups of baby spinach

1 packed cup basil

1/2 cup Macadamia nuts (or use your favorite nut. It is good with almonds and walnuts too)

2 cloves peeled garlic

1/2 tsp salt

1/2 tsp black pepper

Divide 1/2 cup extra virgin olive oil into 2 1/4 cup amounts

You will need a food processor. (I like this one) or a good blender.

Place all ingredients, but only half of the oil into the bowl of your food processor. Pulse until fully mixed together. Add last half of your oil and pulse again until smooth. Poor into a bowl, salt and pepper to taste if needed. You can serve immediately or cover and place in fridge until you are ready to use it.
