Quick and Easy Chip Dip Recipe

Now that summer time is coming it seems like I am always needing a quick pot-luck item for a party or picnic.  This is a recipe my mother in law game me.  I love it because the ingredients are things  I keep on hand in my pantry or the refrigerator.  So it is easy to make last minute, and I don’t have to run out to the store for ingredients.  Another great thing is, you can chill it and serve it cold, or you can heat it up and serve it hot.

Thrifty Bean dip

Start out with a serving dish or large  plate.  Spread 1 (8oz) brick of cream cheese on the  bottom. I have found it is easiest to spread with the back of a clean spoon.

img_0500Then take 1 can of refried beans, and spread it on top of the cream cheese layer.

img_0501Spread your favorite salsa in an even layer on top of the beans

Grate 2-3 cups of cheese and spread over the top.

Slice up olives and sprinkle on the top.  You can also add green onions

You can then either, put it in the refrigerator and serve cold.  Or you can put it in the oven at 350 degrees for 30 min15utes till hot.
