Chicken salad made with rotisserie chicken

This delicious Chicken salad made with rotisserie chicken is a quick meal idea that makes a tasty lunch or dinner. I love eating it on croissants, but it is also good on rolls or bread. Don’t want the carbs? It is delicious as a lettuce wrap too! Using rotisserie chicken makes it faster to make, however you could also just use boneless skinless chicken breast too. The flavors of the chicken, onions, cranberries and pine nuts mix perfectly for a delicious meal.

Chicken salad made with rotisserie chicken

You will need:

1 Rotisserie chicken, shredded  (i use all the meat)
1 cup of mayonnaise
1/2 cup of dried cranberries
1/2 cup of roasted pine nuts
1 tbsp mustard
2 stalks green onions, sliced
1/4 cup thinly chopped red onion (optional)
1/2 tsp ground black pepper
salt (optional)

Mix all ingredients together. Use a strong spoon or even just get in and use your hands to make sure it is all combined well.

Pine nuts may not be something you have tried or have a hard time finding. You can get them bulk in stores like Winco or in small packages at most grocery stores. They are a little spendy but I really recommend them in this recipe.
