Creamy Chicken & Wild Rice Soup

1 lg. Onion
1 lg. Carrot shredded
1 Celery ribbed, chopped
1/4 c. Butter
1/2 c. Flour
8 c. Chicken Broth
3 c. Cooked wild rice
3 c. Cooked, cubed chicken breast
1 c. Milk or half & half
Salt & Pepper

Saute onion, carrot,  and celery in butter over med hi heat.  Stir in flour, gradually add broth.  Stir in rice, chicken s&p and bring to a boil.  Cook & stir 2 minutes until thick.  Stir in milk.  Cook 3-5 min. more.  Garnish with chives or parsley (if desired).
