Looking for a delicious and easy lunch idea? This tuna melt recipe is so delicious. The toasted bread along with gooey cheese and crunch from the veggies is the perfect combination. Keep it simple with some chips, veggies or salad on the side.

If you are anything like me, you get tired of the same lunches every day! I am always looking for ways to spice up the mundane but also keep it simple without taking up a lot of time I don’t have. This sandwich doesn’t take long, but it’s the “grown up” version of a classic toasted cheese and tuna sandwich combined. The melty, gooey mozzarella is perfection with the toasted bread, savory tuna and crunch from the chopped onion and celery.

I am going to share this delicious recipe with you, because everyone needs a new lunch recipe to add to their routine!

Here’s what you’ll need:

Tuna, 2 cans, drained
Onion, medium, chopped
Celery, 1/2 a stalk, chopped
Garlic (1 clove), minced
Parsley, 1 tablespoon, chopped
Mayonnaise, 3-4 tablespoons
Olive Oil, 3 tablespoons, divided
Mozzarella, 1/3 cup, shredded
Salt, to taste
Fresh Black Pepper, to taste
Bread, sliced
Butter, softened

Use your favorite bread for this delicious recipe. It is so good with a good artisan bread! To keep it simple you can always just use regular sandwich bread, but it is so good with a fresh baked sourdough!

Start by draining your tuna and scoop into a medium bowl.

Combine the chopped onion, celery, garlic and parsley with the tuna. Add mayonnaise, 2 tablespoons of olive oil and mozzarella cheese to the mixture. Combine all ingredients until well incorporated and salt and pepper to taste.

Place a non-stick skillet on the stove and add 1 tablespoon of olive oil. While it preheats, spread softened butter on one side of two slices of bread.  Place one slice of bread buttered side down in hot skillet. Use a spoon to scoop about 2 tablespoons of tuna salad on your bread while it is browning before topping the other slice of bread on top of  the tuna mixture.

Use a spatula to peak at the bottom of your sandwich, when it is browned turn tuna melt over and toast the other side until golden brown. When done, remove from pan and slice. Serve with your favorite chips, baby carrots, apple slices or a simple salad.
