Mini Hasselback Potatoes
We happen to love all things potato related in our family, yes we are from Idaho (The Great Potato State) but we also happen to just really love potatoes. They are a low cost, healthy, delicious way to feed my family. What are your favorite potatoes? My personal favorite are Yukon Gold and my husband loves red skin potatoes. Here is a fun way to make potatoes a finger food, for pot lucks or game day parties.
Ingredients
- 6 Small Yukon Gold Potatoes, scrubbed
- 1 Tbsp. Oil
- 1 teas. Salt
- 4 Slices Cheddar Cheese, cut into thirds across and then lengthwise, making 36 small squares
- 4 Green onions, chopped
- Sour Cream
Instructions
Preheat oven to 400. Place a potato between the handles of two butter knives on a cutting board. Slice the potato into ¼ inch slices without going all the way through, use the butter knife handles as a guide. Evenly coat the potatoes with oil, season with Salt and place on a baking sheet. Bake the potatoes for 30 minutes. Remove and place a square of cheese between each of the potato slices. Bake until the cheese is melted, 5-10 minutes. Serve hot with the Sour Cream and Green Onion.
