Fall is here, which means everything pumpkin is on its way. I happen to really enjoy pumpkin, so bring on the pumpkin recipe, pumpkin crafts, pumpkin decor and more. My kids are like most kids and enjoy the sweet treats that come along with Halloween. But I am not a fan of the sugar over load that turns my kids into crabby little monsters. That is why I love this idea to make their sandwich festive and fun but a healthier choice too. I created the Peek-a-BOO pumpkin sandwich for my kids lunch. Everything about it is fun and sure to make kids smile, when they open up their lunch to see this fun surprise. It is fast and easy to make too. Jif Whips has a new Pumpkin Pie Spice Jif Whips that is seriously AMAZING! Smooth and creamy, and almost melts in your mouth. I love slicing up a crisp fall apple and using it as dip. If you like pumpkin you have GOT TO TRY IT, you will thank me later! But for this recipe I just used it in a the classic peanut butter and jelly sandwich. I put the Jif Whips Pumpkin Pie Spice on one side of the bread. On the other side of the bread I used a small pumpkin cookie cutter to cut out the shape of a pumpkin. The put jelly around it and put the two sides together. Use sprinkles to fill in the pumpkin shape to make it look like a little pumpkin.
